Satch and Mike Aiello, president of Troxell, a Springfield, Illinois-based personal and business insurance broker, returned to Bistro Verde at Lincoln Land Community College (LLCC) in Springfield, Illinois, for a second annual “Joys of the Table” dinner. Joined by two of the college’s culinary students, they prepared Italian dishes featuring their family recipes. Proceeds from the sold-out event totaled about $5,000 and will provide scholarships for LLCC’s culinary students.
The five-course meal included an entrée of filet mignon encrusted with parmigiano-and-caper breadcrumbs, with Brussels sprouts and broiled grape tomatoes. Special wines were paired with each dish, and limoncello was served with a dessert of amaretto custard over summer berries, garnished with lady fingers.
Tim Schroeder, a business development specialist in Springfield, attended the event. He said he and his wife, Betsy, had a great time and the food and wine were outstanding.
“It was wonderful to have leaders like Satch and Mike share their talents and recipes with the community while supporting a great cause,” Tim said. “They raised a lot of money that will fund scholarships for students in the culinary program.”
Tim is treasurer of the board of directors for LLCC’s foundation, overseeing $11 million in investments and assets.
